Today is probably one of my favorite posts. Ever since discovering Peanut Butter & Co. and their Dark Chocolate Dreams peanut butter I have pretty much been obsessed. Dont get me wrong, I like a good plain peanut butter as well. But if you have ever tried this treat youd be in love too.

Ive never made buckeyes but they seem to be a holiday staple. They are actually pretty simple to make and seriously, how can you go wrong with peanut butter and chocolate?

So lets get to that recipe and giveaway…

Ingredients
  • 112 cups Dark Chocolate Dreams peanut butter
  • 12 cup butter, softened
  • 1 teaspoon vanilla extract
  • 12 teaspoon salt
  • 3 to 4 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons shortening
Instructions
  1. Combine peanut butter, butter, vanilla and salt in large bowl. Beat with an electric mixer on low until blended. Add 2 cups powdered sugar, beating until blended. Beat in additional powdered sugar until mixture, when shaped into a ball, will stay on a toothpick. Shape into 1-inch balls. Refrigerate.
  2. Place chocolate chips and shortening in microwave-safe bowl. Microwave on medium for 30 seconds. Stir. Repeat until mixture is smooth. Reheat as needed while coating peanut butter balls.
  3. Insert toothpick in peanut butter ball. Dip 34 of ball into chocolate, leaving top uncovered to resemble a buckeye. Remove excess. Place on wax paper-lined tray. Remove toothpick. Smooth over holes. Refrigerate until firm.

Hooray! Its Friday. And we have cake to celebrate. Pound cake! Were you aware that National Pound Cake Day is coming up on Monday, March 4th? Well it is and to celebrate Ive crafted something delicious out of a buttery loaf of Sara Lee All Butter Pound Cake. While Im in love with this recipe, Im also in love with a more traditional spin of a slice of pound cake topped with berries and whipped cream. Ok, now Im hungry. Before I get to my creation, a little housekeeping first!

Now lets get to that beautiful buttery cake…

Lets start with the lemon mousse. In a metal bowl combine the egg yolks, sugar, lemon juice, lemon peel and salt and stir well to combine. Place the metal bowl over a pot of simmering water and continue to stir and cook until the mixture thickens. The temperature should reach 160 and then you can remove the bowl from the water. Allow the mousse to cool.

Now for the white chocolate mousse. Combine the white chocolate and 1/4 cup of cream in a separate metal bowl and place over the simmering water. Stir constantly until the chocolate softens and is nearly melted. Remove the bowl from the heat and continue to stir until the chocolate is completely melted. Put the bowl to the side and allow it to cool.

Beat the remaining cream in a large bowl until stiff peaks form. Divide the cream amongst the 2 mousse bowls, 1 cup at a time, and fold into the mousse. Place the bowls in the refrigerator for 1 hour to chill.

Now for that cake. I chose to make this dish bite-sized but if you wanted to leave the slices whole you can layer them that way as well. I sliced 3/4 thick slices of the pound cake and then used a small circle cutter to cut 2 circles out of each slice. Layer one piece of cake on a plate and top with a spoonful of the lemon mousse. Top the mousse with a second slice of cake and then top with a spoonful of the white chocolate mousse. You can sprinkle the top of your cakes with white chocolate shavings or berries and serve!

If you love lemon and you love white chocolate, this is the dessert for you. Or if you just love a fresh and light tasting dessert, give this a try. My Lemon and White Chocolate Mousse Parfaits were inspired by Bon Appetit magazine and adapted to fit small custard cups. I also replaced the strawberries with raspberries.

Whisk egg yolks, sugar, lemon juice, lemon peel, and salt in medium metal bowl to blend. Set bowl over saucepan of simmering water. Whisk until mixture is very thick and thermometer inserted into center registers 160F to 170F, about 6 minutes. Remove bowl from over water. Cool lemon mousse base to room temperature.

Combine 1/4 cup cream and white chocolate in another medium metal bowl. Set bowl over saucepan of barely simmering water. Stir constantly until chocolate is soft and almost melted. Remove bowl from over water and stir until white chocolate is melted and smooth. Cool white chocolate mousse base to room temperature.

You know what tomorrow is, right? The day youre supposed to give something sweet and special to your sweetheart (or secret crush!). Well, before you run to the drugstore to pick up a sad box of chocolates and a mini-teddy bear, think about making these homemade treats. A little bit of effort goes a long way on Valentines Day. Plus, your S.O. will totally have something to brag to their coworkers about on Monday.

Serve up these pretty Strawberry White Chocolate Scones as part of breakfast in bed or dessert after your big Valentines Day dinner. Theyre indulgent but not so overly sweet that youll feel sick afterward. Even better yet, the rest of the batch can go into the freezer and thawed one by one each morning to go with your coffee or in the afternoon with tea. Just let the scone sit out for 10-15 minutes at room temp and it will be thawed, or microwave it for a few seconds to warm it up. YUM. Its like reliving Valentines Day for weeks!

Instructions
  1. Preheat the oven to 450 degrees. In a small bowl whisk together the eggs, milk, and vanilla until smooth. Set the whisked wet ingredients aside.
  2. In a large bowl, stir together the flour, sugar, baking powder, and salt until well combined. Slice the butter into chunks then add to the flour mixture. Work the butter into the flour mixture until it resembles damp sand (use your hands or a pastry cutter).
  3. Allow the strawberries to thaw slightly, or microwave for a few seconds until slightly softened. Roughly chop the strawberries into bite-sized pieces. Stir the strawberries and white chocolate pieces into the whisked egg mixture.
  4. Pour the egg mixture with strawberries and chocolate into the bowl of dry ingredients (flour, butter, etc.). Stir with a spoon until it forms a ball of dough. If necessary, use your hands to mix the last bits of flour into the dough.
  5. Turn the lump of dough out onto a lightly floured surface and flatten it into a 6-8 inch diameter circle (about 1.5 inches thick). Cut the circle into 8 wedges. Arrange the wedges on a baking sheet covered with parchment paper and bake for 13-15 minutes in the preheated oven, or until lightly golden brown.
  6. Transfer the baked scones to a cooling rack. To make the icing, stir together the powdered sugar, vanilla, and milk until smooth. Wait until the scones are completely cool, then drizzle the icing over top.**

**If you add the icing while the scones are warm, it will melt and slide off.

Wet Ingredients

First, begin preheating the oven to 450 degrees. Preheating is very important for this recipe because the scones need a sudden burst of hot hair to puff up. Next, whisk together two large eggs, 3 Tbsp milk, and 1/2 tsp vanilla extract until smooth. Set the wet ingredients aside.

Dry Ingredients 1

In a separate, large bowl, stir together 2 cups flour, 2 Tbsp sugar, 2 tsp baking powder, and 1/2 tsp salt. Stir until they are very well combined.

Add 5 Tbsp of cold butter (in chunks) to the dry ingredients. Work the butter into the flour mixture until it resembles damp sand (very small pieces). You can do this by smooshing it in with your hands or by using a pastry cutter. Some people also like to freeze their butter then use a cheese grater to grate it into small pieces so that its easier to work into the flour. The important part here is that the butter is cold, so that it doesnt melt into the flour, but stays in small pieces.

And this is what it looks like after the butter has been worked into the flour mixture. Kind of granular.

Now back to the wet ingredients… Measure out 1 cup of frozen, sliced strawberries. Either take these out ahead of time to let them thaw and soften, or just microwave them for a few seconds to soften them up. If you have whole frozen strawberries, you might need to measure more because they wont fill the measuring cup the same way.

Roughly chop the strawberries so that they are in smaller pieces. This will allow the strawberries to be throughout the scones instead of just a big chunk every once in a while.

Stir the chopped strawberries and white chocolate into the whisked egg mixture.

Wet and Dry Ingredients

Then add the wet ingredients to the bowl of dry ingredients and stir them together until no dry flour remains in the bottom of the bowl. I had to use my hands to work the last bit of flour into the dough.

And this is what the dough looks like after its all mixed together.

Cut Scones

Lightly flour a work surface and then shape the dough into a 6-8 inch circle that is about 1.5 inches thick. Cut the circle into 8 wedges. (I used a dough scraper, but you could use a knife).

Arrange the scones on a baking sheet covered with parchment. Bake the scones for 13-15 minutes in the preheated oven, or until they are golden brown on top.

See? All puffed up and lightly golden brown. Transfer them to a cooling rack while you make the icing.

Strawberry White Chocolate Scones

To make the icing, stir together 1/2 cup powdered sugar, 1/4 tsp vanilla extract, and 1 Tbsp milk. Wait until the scones are completely cool before you drizzle the icing over top, otherwise it will melt and slide right off.

  • 1 1/4 cups plus 1 Tablespoon brewed coffee
  • 3/4 cup Dutch process cocoa powder
  • 2 1/4 cups sugar
  • 1 1/4 teaspoons kosher salt

  • 1 1/4 cups plus 1 Tablespoon buttermilk
  • 1 cup plus 2 Tablespoon canola oil
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups, plus 2 Tablespoons all-purpose flour, sifted
  • For the Glaze:
  • 6 ounces unsweetened chocolate
  • 3/4 cup unsalted butter
  • 3 cups powdered sugar
  • 1/2 cup sour cream, at room temperature
  • 1/4 cup brewed coffee, cooled

One of the recipes that I made recently was a Chocolate Bundt Cake which sounded and looked delicious. I will say that it tasted absolutely amazing, however, it didnt turn out as beautiful as I had expected. A word to the wise: always flour your pan.

So in case youre wondering, there is a difference between Hersheys cocoa powder and Dutch processed cocoa powder. Dutch process cocoa has been treated to give it a milder flavor and lowers the acidity.

Moving on! Preheat your oven to 350o and move the rack to the center of the oven. Grease AND FLOUR your bundt pan.

To make the batter, heat the cocoa powder and coffee in a medium saucepan and bring it to a boil, whisking frequently. Remove from the heat and cool to room temperature.

I fitted my handy KitchenAid with the whisk attachment and mixed together the sugar, salt, baking soda, eggs and egg yolk on low speed for about 1 minute. I then added the buttermilk, oil and vanilla extract and mixed on low again for another minute.

I added the flour and mixed on medium speed for 2 minutes. Then I added the cooled cocoa mixture and mixed on medium speed for an additional 3 minutes. The batter will be very loose.

Then pour the batter into the prepared cake pan and bake for 1 hour, or until a cake tester inserted in the cake comes out clean. Let the cake cool completely before inverting it onto a serving platter.

For the frosting, heat the chocolate and butter in a double boiler until completely melted. Sift in half of the powdered sugar and the sour cream and stir to combine. Add the remaining powdered sugar and finish mixing. Lastly, add in the coffee and blend until you achieve a glossy finish. Pour the glaze over the cake and leave at room temperature until youre ready to serve. Serve with a cup of warm coffee or glass of cold milk and enjoy!

*Please note that I do not feel this cake looks beautiful by any means. It was, however, delicious. But dont take my word for it. Give it a try for yourself!

There comes a time in every girls life when she needs a chocolate mug cake.

Perhaps its one of those days where you just want to curl up on the couch all day and watch bad Lifetime movies about stolen babies (ladies, you know what Im talking about). Or maybe you just ran four miles for the first time in your entire life and unless you counteract it immediately with a dessert, the universe will be thrown out of balance and implode, and the entire 2012 apocalypse will be all your fault. Or maybe its your birthday and everyone forgot so there was no cake. Okay, sorry, that last one was kind of depressing. Anyway, my point is, sometimes you just need a bite of cake to make things right. Just a bite.

I was never a fan of mug cakes because all of the versions Ive tried have turned out rubbery and just not at all delightful. Until I found this recipe, which for me is the one. This is why I like it:

  • Its not very sweet. (If you want it sweeter, add more sugar or some chocolate chips.)
  • Its small. Other recipes Ive tried have just been too big and they make me feel like I just over indulged. This one is just a few, rich, delightful bites.
  • There is no egg. I find that eggs make mug cakes rubbery or spongey and they also mean that you cant scale the recipe in size. If you want a small cake, you cant just split an egg in half, right?
  • There are a lot of variations. Add chocolate chips, use nutella, jam, or caramel sauce in place of the peanut butter, vegan-ize it by using soy milk in place of cows milk… lots of options.

Dont be tempted to leave out the peanut butter (or jam, or whatever you drop in the center) because it helps keep the cake moist and rich. It simply wouldnt be the same without it.

So, shout out to Jessie at Made From Scratch for experimenting with mug cakes until finding this perfect mix. You just saved the universe from imploding!

  3. Microwave on high for one minute and then enjoy!

Notes
Microwave power varies slightly, so you may want to experiment with the cooking time, give or take 5-10 seconds. One minute is a good place to start.

Chocolate-Dipped Peanut Butter Cookies with Toffee & Crushed Pretzels by Monique Volz of Ambitious Kitchen

Peanut butter cookies are underrated. Im not sure if its because everyone grew up eating the super crispy ones and found them boring, or if its because chocolate chip always reins king in the cookie world. Either way, Im eager to share a new twist on peanut butter cookies. Im quite certain you might just fall in love…

First I need to be honest: These cookies are downright addictive. In fact, theyre unlike any other peanut butter cookie youve ever tasted. If the instructions are followed correctly, youll end up with soft and chewy peanut butter cookies. And theyll continue to stay soft for days (like theyll last that long)!

A few secret ingredients help the peanut butter cookies bake up beautifully: dark brown sugar, honey and sour cream. The dark brown sugar adds an essential chew to the cookies, the honey gives a unique flavor and helps the cookies react to the baking soda, and, lastly, the sour cream provides moisture to keep the cookies soft.

But why stop there? Dip these babies in a little melted chocolate, then adorn them with a sprinkle of salty pretzels and sweet toffee. Yes, this cookie is sure to win you a few prizes at work. Or at least the best spouse/parent/friend award.

Recipe: Chocolate-Dipped Peanut Butter Cookies

What youll need:

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup all natural creamy peanut butter
1 cup packed dark brown sugar (light will also work just fine)
1 egg
1 teaspoon vanilla extract
1/2 tablespoon honey
1/2 tablespoon sour cream or plain greek yogurt
1 cup chocolate chips
1 teaspoon coconut oil
1/2 cup crushed pretzel
1/2 cup toffee pieces

Preheat oven to 350F. In a medium bowl, whisk together flour, baking soda and salt. In the bowl of an electric mixer, add in peanut butter, softened butter and brown sugar; mix on medium low until well combined. Switch mixer to low speed; add in egg, vanilla extract, honey and sour cream and beat one minute or until well combined, smooth and creamy. Slowly add in dry ingredients, increasing speed to medium low; mix until just combined.

Grab a tablespoonful of dough and roll into a ball with your hands. You can also use a small cookie scoop if you have this available. Place dough on cookie sheet lined with parchment paper, leaving 2 inches apart between each dough ball. Bake for 10-12 minutes or until edges are golden brown. Allow cookies to cool on cookie sheet for 5-10 minutes before removing and transferring to a wire rack. This allows them to set and harden slightly around the edges. Repeat with remaining dough.

In a small bowl, mix crushed pretzels and toffee pieces.

Once cookies are completely cooled, you can prepare the chocolate. First, line two baking sheets with wax paper. Next, add chocolate chips and coconut oil to small pot and place over low heat. Watch carefully and stir often until chocolate is completely melted. Dip each peanut butter cookie in chocolate then sprinkle with toffee-preztel mixture. Place on wax paper and repeat with remaining cookies. The chocolate should set up within 30 minutes, but if you want to speed up the process, just place the baking sheet in the fridge for about 5 minutes.

Cookies will keep for 3-5 days if stored in an airtight container.

Chocolate Pot de Creme

If you read my blog, then you are probably well aware of what a Christmas freak I am. Living in the mountains of Colorado, its pretty hard not to get caught up in the holiday magic when a winter wonderland is right outside your door nine months out of the year (although things arent so magical come June). Nothing says Christmas to me more than a little chocolate enjoyed in front of the fire, with the tree lights shining and music in the background. (Sounds pretty nice, doesnt it?)

Ive always wanted to make the classic Chocolate Pot de Creme. Its actually one of the easiest recipes. Thick coconut, vanilla beans and coffee make this chocolate dessert so good. You guys will love them AND they are perfect for a holiday dinner party. Individual servings are such a hit! Serve them with sugared cranberries or fresh pomegranate arils for a festive look.

Recipe: Chocolate Pot de Creme

What youll need:

9 oz high-quality semisweet chocolate, chopped
1 1/2 cups canned coconut milk
1 1/2 cups heavy cream
6 large egg yolks
1/4 cup granulated sugar
1/4 tsp salt
1 vanilla bean, seeds scraped out + pod reserved
1 tbsp instant coffee
1 tbsp powdered sugar
>Place the chocolate in a blender.

Whisk the coconut milk, 1 cup heavy cream, egg yolks, granulated sugar, salt, vanilla bean seeds and the vanilla bean pod in a heavy-bottomed medium saucepan over medium heat. Cook, stirring constantly with a heatproof spatula, until the mixture is thick enough to coat the spatula and almost boiling, 5 to 6 minutes. Whisk in the instant coffee until fully dissolved.

Immediately pour the coconut milk mixture over the chocolate in the blender. Cover and hold the lid. Blend until combined and smooth, stopping to scrape down the sides of the blender as needed. Divide the chocolate mixture among ramekins or small cups and refrigerate until set, about 2 hours.

Whip the remaining 1/2 cup cream and powdered sugar with a mixer or in the blender until soft peaks form. Top the chilled pots de creme with whipped cream and chocolate shavings. Serve with pomegranate arils if desired.

Chocolate bark is a super quick and easy dessert to pull offand infinitely adaptable. Just choose two types of chocolate (or even peanut butter chips!), melt them and swirl them together. Then, top the bark with whatever you like: candy, cereal, dried fruit, and nuts are all great, so go crazy. I love sweet and salty treats so for this version, I topped dark and white chocolate with salted Marcona almonds, smoked sea salt and cacao nibs. Use chocolate bars (that you then chop up) if possible, as they will make a shiny, snappier finished bark than melted chips.

What youll need:

8 oz. finely chopped dark chocolate
6 oz. finely chopped white chocolate
Toppings, optional

Possible Toppings:
Nuts
Dried fruit
Dehydrated fruit
Chopped crystallized ginger
Flaky salt
Mini peanut butter cups
M&Ms
Chopped candy bars
Pretzels
Potato chips
Tortilla chips
Citrus zest
Cacao nibs
Cookie bits
Marshmallows
Graham crackers
Breakfast cereal

Line a baking sheet with parchment paper.

In a microwave or over a double boiler, melt the dark chocolate. Stir often and melt the chocolate as slowly and gently as possible. If you are using a microwave, microwave the chocolate in 20 second intervals on medium-low heat, stirring after each interval until just melted. This will help the chocolate keep its temper and will ensure that the finished chocolate bark dries shiny and snappy. Melt the white chocolate as well.

Pour the dark chocolate onto the parchment paper and spread it into an even layer about 1/4-inch thick. Drizzle the white chocolate over the top. Drag a toothpick or skewer through the chocolates to swirl it together in a decorative pattern.

Sprinkle assorted toppings evenly over the top of the chocolate. Let the chocolate sit at room temperature until firm. Break the bark into pieces and store in an airtight container. If the chocolate bark does not set up firmly at room temperature the chocolate has lost its temper. Its still totally delicious; youll just need to store it in the refrigerator to keep it firm.

Peanut Butter Chocolate Chunk Cookies

Theres something incredibly special about a classic, crunchy peanut butter cookie. It reminds me of cold winter evenings spent baking with my family. Over the years, though, Ive really grown to love chewy and soft cookiesyou know, the ones with crispy edges and a warm, gooey middle. Theyre the best of both worlds.

Because my blog focuses on unique, better-for-you treats, I wanted to challenge myself to create a chewy peanut butter cookie without flour, butter or glutenand, of course, I wanted it to taste extraordinary, too! It took me five different tries to stumble on one that Im proud of, but I did it.

These cookies are made with all-natural peanut butter, honey, eggs and vanilla, and the result is truly beautiful: puffy, soft cookies with a crispy bottom that are unbelievably easy to make. In fact, you can have one in your belly in less than 30 minutes.

To make these cookies your own, I suggest chopping up one of your favorite chocolate bars and folding it into the doughthe chocolate is really what makes these cookie shine! Ive tried a few special bars, but my absolute favorite is dark chocolate with toffee and sea salt. White chocolate would be great, too. Just remember: a unique chocolate bar makes for a unique cookie!

Also, if you like a hearty cookie with a bit of chew, just fold in 34 cup of oats to the dough. A little sprinkle of sea salt also makes these shine. Any way you do it, you wont be disappointed. Happy baking!

Recipe: Peanut Butter Chocolate Chunk Cookies
Makes approx. 20 cookies

Youll need:
1 1/2 cups all-natural creamy peanut butter
1/2 cup honey
2 tsp. vanilla
2 eggs at room temperature
12 tsp. baking soda
3.5 oz. of your favorite chocolate bar, coarsely chopped

What to do:
Preheat oven to 350 degrees.

In a large bowl, mix peanut butter, honey, vanilla, eggs and baking soda until smooth and well combined. Gently fold in chopped chocolate.

Roll cookies into 2-inch dough balls and place onto cookie sheet 2 inches apart. Then BARELY flatten the top of each cookie with your hand. The dough will be sticky, so if you find this method difficult, simply use a cookie scoop to drop the cookie dough onto the prepared baking sheet. The cookies may not be as round in shape and perhaps a bit thicker, but thats okaythey will still be delicious!

Bake cookies for 8-10 minutes and remove when edges barely begin to turn a golden brown. The cookies may look a little underdone, but they will continue to cook once you remove them from the oven. Cool on the cookie sheet for 5 minutes; then transfer to a wire rack to cool completely. Repeat with remaining cookie dough.

The Best Chocolate Pudding Youll Ever Have

Warm or cold, pudding cups were a part of my childhood routine. I even had a special pudding-eating spoon. Long and skinny, it was the smallest spoon we had in the house (which meant that I got to draw out the satisfaction of eating the pudding much longer than anyone else). Nowadays, even though there seems to be a countless number of flavored puddings and custards, I always come back to good old-fashioned chocolate. Sometimes you just shouldnt mess with an original.

Chocolate pudding is surprisingly easy to make, and takes only fifteen minutes to whip up from start to finish. The pudding is thickened with a combination of cornstarch and egg yolks, which gives it a custard-like quality. A mixture of cocoa powder and melted chocolate lends a proper chocolate touch, while whole milk gives the pudding a rich and creamy flavor. (Two-percent milk would be a great alternative if its all you have in the house, but I would not use a milk lower in fatthe pudding will lose a little of its magic).

The real secret to this recipe is the addition of salt and vanilla extract. Both ingredients provide a contrasting flavor to the sweet chocolate, and the combination of the three takes the flavor of the pudding from one-dimensional to downright delicious. This chocolate pudding may be simple, but simplicity is often just what we need.

Recipe: Chocolate Pudding
Makes 6 1/2-cup servings

Youll need:
3 cups (710 ml) whole milk
1/3 cup (75 grams) granulated sugar
2 tbsp. cornstarch
2 tbsp. unsweetened cocoa powder
1/4 tsp. salt
2 large egg yolks
3 oz. (85 grams) dark or semi-sweet chocolate, finely chopped
1 tsp. vanilla extract

In a small bowl, whisk together 1 cup of milk with the sugar, cornstarch, cocoa powder and salt. When well blended, whisk in the egg yolks. Set aside.

In a large saucepan, bring the remaining 2 cups of milk to a boil over medium heat. Stir frequently so as not to scorch the bottom. As soon as milk comes to a boil, reduce the heat to low and simmer. Gradually whisk in egg mixture, stirring quickly to incorporate. Continue cooking and stirring until pudding thickens enough to thickly coat the back of a spoon, about 2-3 minutes.
Remove from heat and stir in the chopped chocolate until it is completely melted and the pudding is smooth. If there are any small lumps, you may optionally run the pudding through a fine mesh strainer to remove them. Stir in the vanilla extract.

Serve the pudding warm or cold, with a sprinkling of powdered sugar or nuts, or a dollop of whipped cream. The pudding will thicken up quite a bit when cooled.

Let the dough rest for 36 hours (!) before baking. Use chocolate chunks or disks instead of measly chips. And sprinkle sea salt onto the cookies just before baking.

Heres the recipe:
Makes 18 5-inch cookies

2 cups minus 2 tablespoons cake flour
1 2/3 cups bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons coarse salt
2 1/2 sticks unsalted butter
1 1/4 cups light brown sugar
1 cup plus 2 tablespoons granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 1/4 pounds bittersweet chocolate disks or chunks
Sea salt

Sift flours, baking soda, baking powder and salt into a bowl. Set aside.

Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them. Press plastic wrap against dough and refrigerate for 24 to 36 hours. Dough may be used in batches, and can be refrigerated for up to 72 hours.

When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.

Scoop 6 3 1/2-ounce mounds of dough (the size of generous golf balls) onto baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie. Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes. Transfer sheet to a wire rack for 10 minutes, then slip cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day. Eat warm, with a big napkin.

%image_alt%%image_alt%%image_alt%The other cookie we chose is Rice Krispie Treats, because a friend told me recently that theyre the top seller at bake sales. Everyone loves comfort foods, she says, and these remind people of their childhoods. For a more adult version, we chose the New York Times recipe for Caramelized Brown Butter Rice Krispie Treats, which are richer and more complex.

Heres the recipe:
Makes 30 to 50 treats

8 ounces butter, salted or unsalted, plus extra for pan
1 10.5-ounce bag marshmallows
1 12-ounce box Rice Krispies cereal

1. Line rimmed sheet pan with parchment paper or wax paper, or butter it well.

2. In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Watch closely and stir often.

3. When butter is evenly browned, stir in marshmallows. (If using unsalted butter, stir in 1/8 teaspoon salt.) Melt and cook, stirring often, until mixture turns pale brown, then stir constantly until lightly browned but not dark, 3 to 5 minutes.

4. Turn off heat, add cereal, and mix well, preferably with a silicone spoon or a spatula. Scrape into prepared pan and press down lightly. If necessary, butter hands to press mixture flat. Let cool, and cut into squares or bars.

Have we ever discussed my addiction to all things sweet and cold? If you were to put a gallon of ice cream in front of me I could probably plow through the entire thing. It probably wouldn’t end well and I’d have a stomach ache for days, but I’m just saying!

If there was a self-help group for addicts of ice cream, I’d probably join. We literally had to move because we were frequenting DQ too often. Okay, that’s not totally the case. We moved for other reasons.

Chocolate Mint Ice Pops

At any rate, I’ve been looking to alternatives to ice cream. Introducing my delicious Chocolate Mint Ice Pops. With only 3 ingredients these ice pops are certainly Easy as Breeze: Chocolate Almond Breeze, Magic Shell and Andes Candies. Not totally calorie-free but a little easier on the stomach.

These ice pops are super easy to make and your kids can help out too! I love that these ice pops are low in calories, offer a good dose of protein and tons of flavor. And if you’re a chocoholic like myself, you’ll want to try them out before the summer is over.

Chocolate Mint Ice Pops
Author: April | Food n’ Focus
Serves: 4
Ingredients
  • 4 cups Chocolate Almond Breeze
  • ½ cup Chocolate Magic Shell
  • ½ cup crushed Andes Chocolate Mints
Instructions
  1. In 4 plastic cups or a ice pop mold, divide the Chocolate Almond Breeze evenly (1 cup per ice pop). Place sticks/handles into the centers of the almond milk and freeze overnight.
  2. Carefully remove the ice pops from their molds. Place the Magic Shell into a bowl and dip half of each ice pop into the chocolate. Gently sprinkle the candies onto the Magic Shell before it hardens and then freeze for 1 additional hour.
  3. Serve and enjoy!

After all of my chatter this week about chocolate, I’m finally bringing you a recipe! One of my favorite dishes from In Celebration of Chocolate were these White Chocolate Raspberry Crepes prepared by Molly Glackin. I’ve always been a huge fan of dessert crepes but have never actually made them!

Here’s the biggest thing, technique! After many failed crepe attempts I finally got the technique right. There’s a lot that goes into these: proper skillet temperature, proper pour of the batter, proper technique to swirl the batter into the pan, a perfect flip and you’ve got it. Sounds easy, right?

White Chocolate Raspberry Crepes

If you’re serving these at a party or for your family, you can easily make a large batch ahead of time, fold the crepes into triangles and then warm them in the oven before serving. I think that’s one of the things I like about crepe preparation. Just be aware that the batter needs to sit for 12 hours so you’ll want to make the batter the night before.

You can easily use this crepe batter to make any other sweet or savory dish. Chocolate chips, spinach and cheese, you name it. And if at first you don’t have the technique down, try, try again!

  • 1 cup good quality white chocolate
  • Crepe Batter
  • 1 cup flour
  • Pinch of salt
  • 1 tablespoon sugar
  • 2 large eggs
  • 1 tablespoon rum
  • 3 tablespoons melted butter
  • ¾ cup milk
  • ½ cup water
  • Zest of 1 orange
  • Butter for coating the pan
  • Raspberry jam
Instructions
  1. For the White Chocolate Chantilly Cream: Bring the cream to a boil and pour over white chocolate. Stir until it’s melted. Refrigerate overnight and when ready to use, whip in a stand mixer until it is stiff whipped cream.
  2. For the crepes: Sift flour, salt, and sugar into a container.
  3. Add eggs, rum, melted butter, milk, water and orange zest. Whisk until smooth. Refrigerate for at least 12 hours before use.
  4. Melt a little butter in a small saute pan. use a ladle to pour the batter into the warm pan, swirling the pan with a clockwise motion until it just covers the bottom. Do not add too much batter as it will become very thick!
  5. Cook for about 30 seconds to 1 minute. Ideally crepes only have a little bit of color. When the batter seems ‘dry’ on the top, dump onto a clean plate until you are ready to assemble.
  6. If you want to prepare the crepes ahead of time, fold each crepe into fours and place on a baking sheet. Warm at a low temperature to reheat.

I thought perhaps I would the end the week with some sweets. I’ve had this recipe pinned for quite some time and thought it was time to try out these fancy cookies. Although, I made some adjustments. I added some salt and some nuts to make them even more fabulous!

I tried to find a little bit of history behind these cookies, aside from the fact that they are probably served at the Ritz Carlton. Alas, I couldn’t find anything besides the Ritz Carlton hosting a World’s Best Chocolate Chip Cookie competition in November, of which I wouldn’t mind attending.

But honestly, how can you go wrong with a cookie recipe that includes 5 sticks of butter. Seriously. I decided to jazz these puppies up a bit with some pecans and a sprinkle of salt to finish them off and I think it did the trick. My family gobbled them up by the handful!

So just a couple of notes…; This recipe makes a lot of cookies so if you’re searching for just a small batch, I’d cut the ingredients in half. Also, I want to recommend getting an OXO Cookie Scoop%image_alt%for perfectly round cookies. This is a new tool to my kitchen and I will never bake another cookie without it!

Ritz Carlton Salted Chocolate Chip Cookies

Serves: 48
Ingredients
  • 1¼ pounds unsalted butter (5 sticks), room temperature
  • 2 cups granulated sugar
  • 2 cups dark brown sugar
  • 5 eggs
  • 1 Tbsp vanilla
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 6 cups flour
  • 4 cups semi sweet chocolate chips
  • 1 cup chopped pecans
  • Coarse sea salt to finish
Instructions
  1. Preheat oven to 350°
  2. Line a baking sheet with parchment paper. Set aside.
  3. Cream butter and sugars together until light and fluffy, about 2 minutes. Add eggs and vanilla and mix until incorporated.
  4. Stir the dry ingredients in (baking soda, salt and flour) until evenly combined and finally the chocolate chips and pecans.
  5. Scoop batter onto baking sheet on large mounds, 2-3 inches apart.
  6. Bake 10-12 minutes until edges are golden and centers are almost set.
  7. When you remove the cookies from the oven, sprinkle lightly with salt.
  8. Transfer to wire rack to cool completely.

I can’t believe that I can even sit here and write about chocolate today. I’m coming off of a lovely weekend at The American Club in Kohler, WI. I had the opportunity to attend their annual In Celebration of Chocolate event and it certainly was a celebration! But more on that later…;

Today I’m bringing you a tasty treat to celebrate the upcoming Valentine’s Day holiday! As I mentioned last week, I much prefer a low key Valentine’s Day at home with homemade savory dishes and sweet treats. Once again I teamed up with Driscoll’s to create a twist on the classic chocolate covered strawberry, of which I’m pretty much obsessed with.

Chocolate Covered Strawberry Cupcakes

As much as I prefer a box chocolate cake mix I tried my hand at a homemade cake mix and I’m quite pleased with the results. Perhaps it’s the touch of espresso that finished off the batter, but at any rate they turned out pretty amazing.

I recommend using Driscoll’s strawberries for this recipe, both in the buttercream and to garnish, for maximum sweetness and flavor. Use a high quality chocolate to create the ganache frosting. And of course, make enough to share because these are sure to please!

Chocolate Covered Strawberry Cupcakes

Serves: 12
Ingredients
  • For the Cupcakes:
  • 1 cup plus 2 tbsp all purpose flour
  • ¼ cup unsweetened cocoa
  • 1¼ tsp baking soda
  • ¼ tsp salt
  • 1 large egg
  • ½ cup firmly packed light brown sugar
  • ½ cup granulated sugar
  • ½ cup plus 2 tbsp whole milk
  • ⅓ cup strong brewed coffee or espresso
  • ½ cup unsalted butter, melted
  • For the Chocolate Ganache Frosting
  • 6 oz semi sweet chocolate baking bar, broken or chopped into 1 inch pieces or 1 cup Semi- Sweet Chocolate chips
  • ¾ cup heavy cream
  • For the Strawberry Swiss Meringue Buttercream:
  • ½ cup fresh Driscoll’s strawberries (8 ounces), rinsed and chopped
  • 4 large egg whites
  • 1 ¼ cup sugar
  • 1 ½ cup (3 sticks) unsalted butter at room temperature
  • 3 tbsp unsalted butter
  • 12 fresh Driscoll’s strawberries
Instructions
  1. Preheat over to 350°
  2. Sift flour together with cocoa, baking soda and salt. I always sift my cocoa powder. I admit to being lazy when it comes to sifting flour and sometimes powdered sugar, but never cocoa powder, especially in frostings.
  3. In a separate bowl, whisk together the egg, brown sugar and white sugar until well combined.
  4. Whisk in milk, coffee and melted butter.
  5. Slowly add dry ingredients.
  6. Fill cupcake liners ¾ full, (about ¼ C of batter per cupcake). The recipe said to divide the batter evenly. I actually measured it out ¼ C for each cupcake and the recipe made 13 cupcakes. It did not specify how full to fill them. If you only fill them ⅔ full you will probably end up with 15 cupcakes.
  7. Bake for approximately 12-15 minutes until lightly brown around the edges. You can use a toothpick to test for doneness. If you insert a tooth pick and it comes out clean, your cupcakes are finished. Let cool for at least 5 minutes until transferring to a wire rack to cool. Cool completely before frosting.
  8. For the Frosting:
  9. Place chocolate a heatproof bowl, place over a pot of simmering water and stir until melted and smooth.
  10. Heat heavy cream on the stove until hot but not boiling. Add the heavy cream to the melted chocolate and whisk until smooth. Allow to cool until warm. Whisk in butter until smooth. Let sit for at least 1 hour until spreadable
  11. For the Strawberry Swiss Meringue Buttercream:
  12. Puree strawberries using a food processor.
  13. Temper egg whites and sugar in a heat-proof bowl over a pot of water on medium heat. You need just enough water to cover the bottom of the pot. Heat the mixture to 140°F. Make sure to stir constantly to avoid cooking the egg whites.
  14. Using a wire whisk on your stand mixer, beat on medium-high for 8-10 minutes until the egg whites form soft peaks
  15. Reduce mixer speed to low and add butter 1 tbsp at a time, ensuring each addition is well mixed.
  16. After all the butter has been added, change to paddle attachment and continue beating on medium to allow all the air bubbles to escape. In about 3-5 minutes until the frosting is smooth.
  17. Add pureed strawberries and mix until combined, careful not to over mix.
  18. Serve the same day or you can refrigerate in an air-tight container for up to 3 days. If refrigerated, you will need to bring it to room temperature (about 4 hours) and remix using the paddle attachment for about 5 minutes.
  19. Assemble the cupcakes by spreading a thin layer of the chocolate ganache frosting on top of each cupcake. Pipe a good amount of the buttercream onto the top of each cupcake and garnish with a small fresh strawberry.

In an effort to be healthier this summer (and in life) I’ve been on a total salad kick lately. I have finally fallen in love with kale and all of its amazing nutritional benefits. I’ve been preparing all of my salads for the week on Sunday afternoon to make sure that I have a healthy option to just grab on my way out of the door to work each morning. And it has been working beautifully. And since lettuce and cucumbers can become boring, I’ve been mixng up my toppings each week. This week’s salad: Blueberry Balsamic Summer Salad.

This salad features antioxidant rich blueberries, a zesty white balsamic vinaigrette and a sprinkle of tasty feta cheese. Not only is this salad delicious and nutritious, it’s also really beautiful all laid out on a platter. Not that I’m eating off of a platter at work, but in the event that you want to serve this salad at a summer picnic, it’s pretty beautiful to look at.

Marshmallows have been one of the favorite desserts for a long time, but it seems that their delicious taste does not bring health along, as even though they are fat-free, they are loaded with sugar.

Thus, a regular marshmallow has 4 grams of added sugar, and let’s admit it, almost no one eats a single one and leaves the scene!

Hence, a cup of mini marshmallows contains even 29 grams of sugar, which is more than 400 empty calories, even 10 grams over the recommended daily amount!

The excessive intake of sugar raises the intake of calories and leads to various health issues, such as obesity and weight gain.

Moreover, foods rich in sugar are generally poor of free of any healthy nutrients. Also, the more sugary foods you consume, the less room for fruits, vegetables, and healthy foods remains in the diet.

The intake of sugar has been shown to be directly linked to severe long-term health issues, including:

  • Insulin resistance and diabetes
  • Heart disease
  • Inflated cholesterol levels
  • Several cancers, such as pancreatic cancer
  • Food addictions
  • Teeth issues, like cavities

Therefore, we suggest the recipe of these incredibly delicious marshmallows, which are free of the health-compromising sugar. Additionally, they can be prepared in a coconut or chocolate version, according to your preferences.

As soon as you make them, you will no longer buy marshmallows at the store, for sure!

Ingredients

  • 1/2 cup honey
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 1/2 tablespoon gelatin
  • 1/2 cup cold water

Method of preparation:

You should grease a loaf pan a bit, and cover it with parchment paper, and grease it as well. Then, in a medium bowl, or a bowl with a mixer with an attached whisk, pour ¼ cup of water, and add the gelatin over it. Leave it aside to soften.

Then, add another ¼ cup of water, the salt, and honey in a small pot, and place over medium heat. Bring the mixture to 240 degrees, using a candy thermometer. accurate temperature.

You can also test it by dribbling a bit of the liquid into a bowl of ice-cold water, and when cooled in the water, it should be in the candy stage of forming little, soft balls. This temperature is reached in 7-8 minutes.

Remove the pot from heat as soon as you reach the proper temperature.

Now, add the hot syrup to the gelatin mixture carefully, using a hand mixer on low. Pour the hot mixture in a drizzle down the side of the bowl.

Next, add the vanilla, and beat for 12-15 minutes on high speed, in order to get a thick mixture. Then, scrape into the prepared pan and set it aside uncovered, for 4-12 hours, or overnight, in order to dry. Afterward, just cut it into squares, and it is ready to be served.

Cocoa Version: When finished, you can roll the cut marshmallows in cocoa powder.

Coconut Version: You should toast a ½ cup of coconut flakes, unsweetened, and sprinkle half of it on the bottom of the pan. Then, scrap in the marshmallow mixture, and sprinkle again with the other half of the coconut flakes.

Fiesta Salmon Tacos

Let’s talk a little bit first about my love for wine because it hasn’t always been this way. It really was after my trip to Italy that I began to really appreciate wine. All different wines. Reds. Whites. I have my favorites, but don’t tell them that! With this great love, I’m sure you can imagine my excitement when I was contacted by Rainstorm Wine to do a little taste test and recipe for them.

Fiesta Salmon Tacos

Rainstorm let me know that they were teaming up with Copper River Salmon out of Alaska and they wanted to know if I would do a wine and food pairing using some of their deliciously fresh salmon. Of course I was on board!

Which brings me to the thing that I’m learning to love. Much like wine, I haven’t always been a fish person. Shellfish I can manage, fish-fish, I struggle. But my fiance has been really try to get me to love salmon and I think it’s working! I’m learning that if cooked properly with a few herbs and spices, salmon is actually pretty awesome!

Fiesta Salmon Tacos

I decided to try my hand at some fish tacos, because who doesn’t love tacos? Using a cedar plank and some seasonings from Fire & Flavor, I got to work. I used a simple combination of olive oil and the Classic Rub from Fire & Flavor to season the salmon. I didn’t want to overpower the freshness of the salmon that came from Copper River. I grilled the salmon on a cedar plank that I had soaked in water and the flavor turned out amazing! Just a few toppings later (purple cabbage, grilled corn and guacamole) and I had the best meal ever.

Oh, and I can’t forget about the wine. I paired my tacos with the Rainstorm Silver Linings Pinot Rose. It’s light and fruity, perfectly crisp and goes well with salmon tacos!

So once you stop drooling over the photos of these tasty tacos, I want you to go pick up the ingredients to make your own at home. You won’t be sorry!

Fiesta Salmon Tacos

Serves: 4
Ingredients
  • 8 ounces fresh salmon, cut into 1″ cubes
  • ¼ cup olive oil
  • 1 tablespoon Fire & Flavor Original Rub (or salt and pepper)
  • 8 corn tortillas
  • 1 cup shredded red cabbage
  • 2 ripe avocados
  • ¼ cup diced red onion
  • Juice of 1 lime
  • 1 jalapeno, diced
  • 1 ear of corn, grilled and cut from the ear
  • Salt to taste
Instructions
  1. Toss the salmon cubes in a bowl with the olive oil and seasoning. Allow the salmon to marinate for 1 hour. While the salmon marinated, allow a cedar plank to soak in water for 1 hour.
  2. While the salmon marinates, prepare the guacamole by mixing together the avocados, lime juice, red onion and jalapeno. Season with salt to taste.
  3. Heat your grill to medium-high heat. Remove the cedar plank from the water and lay out the salmon pieces in a single layer. Grill for 8-10 minutes.
  4. Prepare the tacos by warming the tortillas. Divide the salmon, cabbage, corn and guacamole between the 8 tacos. Serve immediately with Rainstorm Silver Linings Pinot Rose.

S’Mores Cookies on a Stick – how cute and fun are these? My little guys loved these and loved making them for our latest HERSHEY’S #HelloHappy Moment(s).

As many of you know, I’ve partnered up with HERSHEY’S to share a few #HelloHappy Moment(s). Moments like the pudding parfaits from here and the sheet cake here. The idea behind #HelloHappy is to choose happiness anywhere and at any time during the hustle and bustle of life’s little moments.

For us, this latest #HelloHappy moment is two-fold. We are celebrating summer break and Summer Solstice.

Things are finally slowing to a less frenetic, and less dramatic pace! Dramatic? Yup, you would be amazed how even little boys have their own little set of drama at school — things like, “Can you believe so-and-so chose so-and-so before me for his basketball team. I mean, Mom, I shot 10 points that last game the last one was basically a buzzer beater.”

But now that we are easing into summer, I’m thankful we can put the snooze button on all of the drama and the mad rush of school for a few good weeks. We are moving on to fun projects and more together time at home.

My little guy Cole is an avid Chopped watcher, so he loves getting into the kitchen with me and Matt. To celebrate Summer Solstice, we decided to bring the outdoors indoors with these S’Mores Cookies on a Stick. Of course you can skip the stick, but it really makes this cookie recipe that much more fun – to go hunt and gather sticks with your little ones.

Aside from that, it’s a great way to get your kids outdoors for a little hike that lasts longer than thirty minutes. Even the baby got into the act by pointing to his chosen sticks and saying, “this, this, this . . .”

Armed with our sticks (cleaned of course!), HERSHEY’S chocolate bars and some mini marshmallows, we got into the kitchen to get things started. Cole being the chef-in-training, always likes to take on the task of measuring and mixing, while the baby provides laughter as he darts in and out of the kitchen making little squeals.

This is exactly why I love our ‘Hello Happy Moments’. It’s nothing grand or anything that involves heavy planning, it’s just fun little moments like this that carves out special memories.

HERSHEY’S S’mores Cookie on a Stick

Yield: 30-40 cookies

Ingredients:

  • 2 ¼ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. kosher salt
  • 2 sticks unsalted butter, at room temperature
  • ⅔ cup granulated sugar
  • ⅔ cup firmly packed light brown sugar
  • 2 large eggs
  • 2 tsp. pure vanilla extract
  • 6-7 HERSHEY’S Milk Chocolate Bars
  • 2 ½ cups mini marshmallows
  • 20-30 sticks or small branches

Directions:

Preheat an oven to 350°F. Line 2 baking sheets with parchment paper.

In a bowl, sift together the flour, baking soda and salt. Set aside.

In the bowl of a stand mixer with paddle attachment, beat together the butter and the granulated and brown sugars until the mixture is light in texture, about 3 minutes, scrape sides and bottom of bowl. Beat in the eggs and vanilla, scrape sides and bottom of bowl. Reduce the speed to low and gradually add the flour mixture, beating just until smooth and stopping to scrape down the bowl as needed.

Place a cleaned stick on parchment lined cookie sheet, drop rounded tablespoonful of the dough onto one end of the stick, spacing them about 1 inch apart. Bake cookies for 5-6 minutes. Remove bake sheet and sprinkle top of each cookie 2-3 HERSHEY’S Milk Chocolate Bar squares and mini marshmallows. Return baking sheet to oven and bake for remaining 5-6 minutes or until cookies are lightly browned.

Let cool for 3 minutes on the baking sheets, then transfer to wire racks to cool slightly before serving.

Ok, so I have a thing for salad. Wrap it up spring-roll style like this and I’m probably going to have more salad than if I had to “fork” it. Nowadays, I do stuff like this Chinese salad spring roll — fast, easy and somewhat healthy. I make them the night before and grab one when I’m hungry.

I’m making an effort to eat better (and just plain eat). Admittedly, most days, I end up only having breakfast then snacking on nuts or fruit for dinner. It’s not a diet thing — more a bad habit of working obsessively until I finish what’s at hand before I take a break.

So these spring rolls, even if I’m eating with one hand and working with the other is, is a step in the right direction.

Yield: Makes 8-10 wraps

Ingredients:

Vinaigrette

  • 1/4 cup soy sauce
  • 2 tablespoons Mirin or sweet rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon finely grated peeled fresh ginger
  • 1 teaspoon dried hot red pepper flakes

Salad

  • 1/2 pound Napa cabbage, cut into 1-inch pieces (3 1/2 cups)
  • 1/4 pound snow peas, cut diagonally into 1-inch pieces
  • 2 carrots, cut into 1/2-inch pieces
  • 1 red pepper, cut into 1/2-inch pieces
  • 1 seedless cucumber (usually plastic-wrapped), quartered lengthwise and cut into 1/2-inch pieces
  • 3 scallions, finely chopped
  • 1/2 cup chopped fresh cilantro

Assembly

  • 8-10 rice paper
  • 1 butter leaf lettuce head or 2 radacchio heads, thick stems removed and cut in half

Directions:

Combine and whisk together all vinaigrette ingredients. In a large bowl, toss all salad ingredients with vinaigrette.

Assembly: Fill a shallow pie pan with warm water. Working with 1 sheet of rice paper at a time, submerge it in the water and quickly transfer it to a dry towel. Rice paper will become pliable within seconds. Place a piece of lettuce on top of the rice paper. Layer with 2-3 tablespoons of salad on top. Roll the paper halfway. Fold both sides of the paper over the filling. Keep rolling to seal.
